Ingredients

Omelet

  • 2 2 large egglarge eggs
  • 2 tbsp 2 tbsp heavy whipping cream
  • salt and ground black pepper
  • ½ tbsp ½ tbsp butter or coconut oil (optional)
  • 3 oz. (¾ cup) 85 g (180 ml) shredded cheese

Filling

  • 2 2 mushrooms, sliced
  • 2 (1¼ oz.) 2 (35 g) cherry tomatoes, sliced
  • ½ cup (½ oz.) 120 ml (15 g) baby spinach
  • 2 tbsp 2 tbsp cream cheese (optional)
  • 1 oz. 28 g deli turkey
  • 1 tsp 1 tsp dried oregano

Making low carb simple

Instructions

  1. Whisk together eggs and cream in a bowl. Season with salt and pepper.

  2. Heat the butter over medium heat in a non-stick frying pan. Spread out the cheese in an even layer so it covers the entire base of the pan. Fry over medium heat until bubbly.

  3. Carefully pour the egg mixture over the cheese and lower the heat. Cook for a few minutes without stirring.

  4. Fill one half of the omelet with mushrooms, tomatoes, baby spinach, cream cheese, turkey and oregano. Fry for a few minutes more.

  5. When the egg mixture starts to set (it can still be quite loose on top, but not too loose), fold the empty half over the side with toppings to form a crescent. Fry for a few more minutes and enjoy!

Tip!

There are an infinite number of ways to vary the filling. Here are a few suggestions: mozzarella and pesto; taco mince and avocado; smoked salmon, cream cheese, and baby spinach; tuna, mayonnaise, and scallions.

    There's no way this is 8 grs net carb. How does this break down;

    Depending on your product choices, there are about 6-7 net carbs in the dairy products. HWC ~2, Shredded Cheese ~2.6, Cream Cheese ~1-2. The vegetables and spice account for the remaining carbs.

    I really like this one. I have changed it a bit by reducing the butter because the cheese produces it own oil. Also, I have changed the cheese I use because the first one was too salty. It is a favourite with my slight alterations. I am going to try some of the variations listed. Also a cast iron fry plan really helps to create the crust.

    Ok, so this needs a bit of trial and error from my part to ensure I don't burn the cheese. I didn't have deli turkey so I used 1 slice of german salami, 1 slice of pepperoni and 1 cooked bacon, 1 mushroom instead of 2 +the stuff from the recipe. I like the crust but cooking the cheese makes it too salty for me so I think I will add the cheese to the egg instead (I like stretchy cheese when melted :)). We had it for dinner so it was a nice change from the chicken.

    This is one of my go to omelets I love it. sometimes its just cheese mushrooms and turkey but most of the time its the exact recipe , this again was one of those ,, not so sure about ,, but tried it and love it recipes

    I recommend watching the video before making the omelette, as I used a smaller pan and thus it was swamped with liquid. The cheese was very tasty but not dry and crunchy as it would have been with a larger pan. I didn't even have mushrooms or turkey and it was still delicious!

    What is “mature cheese” supposed to mean?

    Aged or mature cheeses are firmer in texture and tend to be aged for 6 months or longer. The longer the aging process, the more concentrated or sharp the flavor. Cheddar, Swiss, Parmesan, and Gruyère are examples of aged cheeses.

    You could try unsweetened coconut cream, coconut milk, or almond milk.

    We recommend eating to hunger, so there's no need to force yourself to eat if you're not hungry.

One tip: melt the cheese in the pan, then let it cool and set slightly before pouring in the egg, so that doesn’t push the cheese to the sides of the pan.     You need aged cheeses, not soft cheeses like mozzarella or buratta. That's why it sticked.
    Parmegiano, Pecorino, Cheddar, Gruyere are all hard cheeses that we're matured for months.

    This one is a large portion, but you don't have to eat it all :) Eat to your hunger and save the rest for later.

    The recipe has been tweaked a bit, but 5g net carbs is accurate for the recipe that shows now.

    Made this omelette this morning and not only was it soooooo delicious my BS stayed in target. Instead of cream cheese I did use two table spoons of ricotta cheese and instead of the turkey cold meats I used bacon. I will be cooking this omelette with various other types of fillings.     I love this recipe. I prefer to use a large pan because the omelette is less wet when I go to close it, I like it a little more cooked than the video shows. Anyway, it is one of my favorite breakfasts.

    It completely depends on the cheeses you use. Cheddar cheese has less than .5g carbs. Regular cream cheese only has 1 for 2 tbsp and that sad it was optional anyway.

Could have gone even lower on butter, as one commenter did, since the melting cheese leaves plenty of oil in the pan. Will never go back to plain boring omelettes.
