Ricotta cheese is best known for delivering the sweet richness of cheesecake, calzones, manicotti, gnocchi and lasagna; but few people know just how truly delicious ricotta cheese is when simply prepared with crostini or toastand a variety of fillings.

We like to prepare our Ricotta Crostini Recipewith fresh crusty bread (try whole wheat, sourdough, country, multigrain or ciabatta), high-quality ricotta cheese (we used Natural and Kosher), and an assortment of sweet and savory mix-ins from which our family can build their own toasted sandwiches.

Convenient& Versatile

Breakfast is a good time to try some sweet add-ins to Ricotta Toast like fresh berries, orange segments, whole-fruit jam, chocolate shavings, or honey. Savory mix-ins like sliced almonds and crushed pistachios, ora spoonful of pasta sauce, pesto, or olive tapenade, can punch up the sweetness of the ricotta cheese to create a memorable crostini recipe.

Fit for A King

Like other modern cheeses, ricotta can be made from sheep, goat, or water buffalo milk. It was first developed in ancient Rome as a meansto use up the whey by-product created in the production of rennet-based cheeses. The Romans blended whey with fresh milk to create the distinct creamy mixture that we know today, and it wasn't long before the new cheese became a favorite of the noble classes.

We like to serve Ricotta Toast with a fresh salad that features fruit like our Avocado Mango Salad, Watermelon Steak Salad, or our delicious and filling Warm Blood Orange- Avocado Pistachio Salad.   • 1 loaf crusty bread, whole wheat, sourdough, country, multigrain or ciabatta
  • 1 lb Natural and Kosher Whole Milk Ricotta
  • Toppings of your choice - see note or body of the post

Instructions

  1. Cut bread into slices and toast
  2. Spread about 2 tablespoon of ricotta on each slice
  3. Top with your topping of choice see suggestions in the notes
