This pumpkin pecan chaffle is the perfect low carb dessert for Fall. A delicious mixture of spiced pumpkin with the slight crunch of sweet toasted pecans.

The popular keto chaffle recipe is turned into a sweet, seasonal dessert with the addition of pumpkin and chopped toasted pecans. I served mine with a dollop of low carb caramel sauce with a toasted pecan. So far, this is our favourite chaffle recipe I’ve made.

WHAT IS A CHAFFLE?

The keto chaffle is currently all over the internet as it’s a very low carb bread replacement recipe that can be easily turned into a sweet recipe too. The basis of a chaffle is simply egg and cheese made in a waffle maker. Just as the famous Fathead dough can be made into a sweet or savoury recipe, so can the mighty chaffle. The difference being that a chaffle does not have cream cheese in it and it is a lot quicker to make.

Once you find a chaffle recipe that works for you (it took me a few attempts and a lot of oozing cheese escaping from the waffle maker) then there will be no stopping you. You will walk past your waffle machine when you are hungry and think “ooh, whip up chaffle, it won’t take long!” There’s nothing like instant low carb gratification!

Now that the Chief Taster is aware of the chaffle and how quick it can be made, my kitchen may turn into a chaffle on demand station. I need to show him how to make it himself. Or if you are reading this husband, follow the recipe below and make sure you clean up afterwards!

HOW TO MAKE A PUMPKIN PECAN CHAFFLE

Making a pumpkin pecan chaffle is simple and quick. I use a waffle machine that makes 2 large rectangles and this chaffle recipe fills up the waffle machine perfectly without half of the mixture exploding from the sides. If you are using a smaller waffle machine, make sure that you do not spoon too much mixture. You need to quickly spread it out evenly across the waffle plate, so it does not ooze out of the sides of the waffle maker.

A delicious taste of pumpkin and pecan in a low carb chaffle form! If you are looking for a holiday breakfast, try this pumpkin pecan chaffle. Even those not following a low carb diet will love it. The addition of a low carb caramel sauce is perfect, but a side of whipped cream would be just as welcoming.

These yummy pumpkin pecan chaffles also have the paws up from Teddy, my largest dog. I had made a few chaffles and left them in the kitchen on what I thought was a safe place, whilst I set up my area to take photos. Upon returning minutes later, 3 pumpkin pecan chaffles had disappeared and he was finishing the last one with a hint of guilt and defiance in his eyes. A scolding was administered followed by a quick panic check on Google whether pecans are okay for dogs. Thankfully there was a small amount and he was a big dog.

Equipment

  • Waffle Maker

Ingredients

  • 1 egg
  • ½ cup mozzarella cheese grated
  • 1 tablespoon pumpkin puree
  • ½ teaspoon pumpkin spice
  • 1 teaspoon erythritol low carb sweetener
  • 2 tablespoons almond flour
  • 2 tablespoons pecans, toasted chopped

Instructions

  • Turn on your waffle maker and lightly grease it (I give it a light spray with olive oil)

  • In a bowl, beat the egg.

  • Add the mozzarella, pumpkin, almond flour, pumpkin spice and erythritol and mix well.

  • Stir in the pecan pieces

  • Spoon the batter into your waffle maker and spread out evenly.(If you have a smaller waffle maker use half the mixture to make one waffle, then repeat)

  • Close the lid and cook for 5 minutes.

  • Using tongs, remove the cooked waffles

  • Serve with whipped cream or low carb caramel sauce. Perhaps some pecan nuts.

Notes

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.

    The recipe said it was dairy free, but cheese is dairy. Is there a substitute for the cheese I could use instead?

      I think you might be looking at another recipe as a chaffle is not dairy free.
