This kielbasa and cabbage casserole is a very easy dishthat tastes delicious. Roasting the cabbage and peppers gives it an added sweetness that contrasts the bite of the kielbasa. Chop, mix, roast and you have an easy dinner with simple ingredients perfect for a busy weeknight meal.

I remember as a kid we always had kielbasa on Easter Sunday. One Easter my mom forgot to buy it and we went everywhere after church looking for an open grocery store. Unfortunately there was none to be found. So I always think about kielbasa around Easter time and tend to have some on hand.

This year I bought my kielbasa early and ended up being invited to 3 Easter dinners so we never ate it. That’s when I thought up thiskielbasa and cabbage casserolerecipe because I was in the mood for some good kielbasa.

The sweetness from the roasted cabbage and peppers goes perfectly with the garlic of the kielbasa sausage. The cabbage almost tastes like noodles or halusky with Polish sausage. It’s such an easy and delicious dinner.

Recipe ingredients I used and substitutions.

The simple ingredients I used were a head of cabbage, kielbasa, olive oil, onions, bell pepper and tomatoes. I also used salt and black pepper to season.

Cabbage
I used regular green cabbage for this dish. You can use other kinds like red cabbage or savoy however the cooking time may vary. Also I like to chop this in bigger pieces and not like you would coleslaw. It seems more substantial to the dish that way.

Peppers and Onions
I love sweet bell peppers and onions when they are roasted. I would not use green peppers because they tend to be a bit bitter. However you could use some banana peppers or other hot peppers if you like more heat or spicier food. I would still use the bell peppers too though. Also I just use yellow onions though you could use white or red onions as well.

Kielbasa
Kielbasa is sometimes called Polish sausage and has that nice garlic bite to it which goes great with the sweeter roasted veggies. You can substitute with other types of sausage like Italian sausage or any flavored sausage you want.

(Note if you are gluten free, just make sure your kielbasa or sausage is gluten free.)

Tomatoes
I really like use grape tomatoes or even cherry tomatoes will work. I like that they don’t just dissolve into the dish when roasted like regular diced tomatoes would. However if you have nothing else you could use canned tomatoes but drain them first.

I love the simplicity of this dish but other seasonings you could use if you want are hot pepper flakes for some spice and heat. You could also add other veggies like potatoes or experiment with different spices like onion powder, garlic powder, paprika or even Italian seasoning if you use Italian sausage.

How to make kielbasa and cabbage casserole.

Step 1: Preheat oven to 400°F. Spray a large casserole dish with nonstick cooking spray and set aside.

Step 2: Chop the vegetables but keep the grape tomatoes whole unless they are very large then slice in half. Mine were not. Place into a large mixing bowl and toss with the olive oil, salt and black pepper. The spread them evenly in a single layer in the baking sheet.

Step 3: Cover the baking dish with aluminum foil. Then place the sausage and cabbage casserole into the oven and bake for 30 minutes. Next take off the foil and bake for 20 minutes more so the veggies are all softened and cooked through.

Step 4: Take the casserole out of the oven and add the ½ inch pieces of sliced kielbasa. Place back in the oven and bake for 10 minutes more so everything is cooked through and golden brown.

Note if you like crispier kielbasa you can add it to the dish earlier in the cooking process. You could also place the casserole under the broiler for a few minutes.

Step 5: Take out of the oven and let cool before serving. Store leftover sausage and cabbage casserole in an airtight container. Please scroll down to view the printable recipe card.

What to serve with this sausage and cabbage casserole.

We ate this as a one pot meal because it had the veggies and meat all in one. You can add a simple green salad if you want or even add some crusty bread.

Also this would go great with egg noodles to make it more like halusky or try other pasta shapes or even rice if you want more of a hearty meal. We were trying to keep the carbs and calories down with this dinner but feel free to improvise if you want!

This kielbasa and cabbage casserole is a delicious combination of sweet roasted vegetables and the garlic bite of kielbasa sausage. Simple but tasty meal perfect for busy weeknight dinner.

Ingredients

  • 1 cup onion, sliced
  • 2 tablespoons olive oil
  • 2 cups sweet bell peppers, sliced
  • 1 pint grape tomatoes
  • ½ head cabbage, sliced (about 4 cups)
  • 14 ounces package Polish kielbasa, sliced into ½ inch pieces
  • salt & black pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Slice and chop the vegetables except the grape tomatoes. Keep them whole unless they are unusually large then just slice in half. Note that I like to chop the cabbage in bigger pieces so it's more substantial in the dish.
  3. Place the vegetable in a large mixing bowl and toss with olive oil, salt and black pepper.
  4. Spray your baking dish with nonstick cooking spray and then add your veggies. Spread out evenly in the casserole dish.
  5. Cover with aluminum foil and cook for 30 minutes covered. Then take off the foil and cook 20 minutes more uncovered.
  6. Addd kielbasa and cook 10 minutes more or until you get the vegetables as brown as you like. Cooking time may vary.

    Note if you like crispier kielbsaa add them earlier in the cooking process or you can place the dish under the broiler at the end until you get it as browned as you like.

  7. Serve as is or add egg noodles for a haluski type meal. You can also add some hot pepper flakes for more spice. Store leftovers in an airtight container.
