It is surprisingly very easy to make these eggless waffles at home with simple real ingredients. It takes only 15 minute preparation time followed by 5 minute cooking time to make these waffles .

I had never eaten waffles while growing up. It was not even a thing 20 years back in India. My mom did make pancakes but they were savory ones which we call pudla/ chilla. When I was in last year of college, I tried waffles for the very first time . I faintly remember, it was at as small café in town which served eggless variety. And I was like … yummmm this stuff is really good!!! Then I regularly started visiting that café only for eating waffles.

Once I moved to the United States the waffle cravings weren’t gone. The food trucks nor the diner here sell egg free waffles. So I had to make it myself. I got this Cuisinart griddler for Christmas and bought the waffle attachments too. It took lot of trying and testing various recipes to come to this perfect waffle recipe that I am sharing with you guys today. It is everything I want in a waffle. These waffles are light and fluffy on the inside and crispy on the outside. I just hate chewy gummy waffles .. I mean who likes them right???

What’s the difference between Belgian waffles and regular waffles?

Belgian waffles are thicker than regular waffles. They have deeper pockets and are lighter in texture than the regular normal waffles. Belgian waffles are traditionally made using yeast which lends an airy and crispy texture to them. This crispiness can be achieved using baking powder too. My recipe uses baking powder to make crispy waffles.

What can you use instead of eggs in waffles?

Truly speaking … NOTHING . You just leave the eggs out. You can use applesauce, bananas or flaxseed meal if you like to but not needed. My recipe has enough baking powder that does the trick. And there is no funny after taste. It tastes exactly like Classic Vanilla waffles with eggs.

How do you make waffles without eggs?

Can you make pancakes with waffle batter?

In my experience waffle batter has more added fat like butter or oil to make them crispy and have more leavening agent than what is required for pancakes. If you do not have a waffle maker and want to make pancakes with this batter, I have some minor alterations mentioned in the recipe notes for you. And sure, you can make pancakes with waffle batter and vice versa.

How to make healthy waffles ?

  • Substitute All purpose flour aka maida with whole wheat flour and oats 80 : 20 ratio. Only whole wheat flour will make waffles dense.
  • Adjust liquid accordingly for the consistency of the batter. Substitute sugar with coconut sugar, agave or if you consume honey then feel free to use.
  • Top it with fruits and nuts and some sweetened yogurt drizzle

How do you make vegan gluten free waffles?

  • Simply use Gluten free flour instead of all purpose flour
  • Add 1 flax egg ( flaxseed gel ) i.e 1 tablespoon flaxseed meal dissolved in 3 tablespoon lukewarm water.
  • Reduce liquid by 2 tablespoon in the recipe

How to make waffles without a waffle maker?

Waffles without a waffle maker won’t give you the same experience.

You can still enjoy it in form of pancakes or make them on a grill pan. The look and texture won’t be same as a waffle.

You may even bake waffles in your oven using silicone molds. They really work well and doesn’t take much space in your kitchen like a waffle maker does. So you may consider buying the waffle maker molds.

What is the best waffle maker to buy?

I have a Cuisinart griddler. It has these waffle attachments . I am very happy with the quality of Belgian waffles it makes. You may use waffle iron of your choice.

Can you freeze waffles?

Yes absolutely. I do it all the time with leftover waffles. I wrap each waffle individually in a cling wrap twice and then slip them into freezer safe plastic bags taking out as much air I can. Then place them in the freezer and use as needed.

To defrost I simply take out the waffles from the bag and cling wrap. Let it thaw at room temperature for 10 minutes then pop them into the toaster and warm it. You may warm the waffles both sides on low heat on a griddle too.

These vegan waffles are like a clean slate for your favorite toppings.

I love the classic combination of Strawberries, chocolate sauce and whipped cream.

You may go for fruits of your choice .

Variations for eggless waffles

Sky is the limit .

You may go as simple as some maple syrup or fancy as Nutella or peanut butter.

Top it with nuts , fresh fruits like mango , strawberries, bananas .

Add some flavor to the batter. Instead of vanilla you can do orange, almond , lemon extract. You may use pumpkin spice, chai spice or cardamom too. For chocolate waffles you may add some cocoa too.

Ingredients to make waffles –

These eggless waffles are made with easy to find ingredients . You should have everything at home right now.

Mainly Flour, sugar, baking powder , milk , vanilla and butter.

I haven’t used baking soda to make these waffles. Baking powder does the trick for me here lending airy waffles.

I have used melted butter as it is essential for the crispiness . You may use oil if desired.

Ingredients

  • 1.5 cups all- purpose flour
  • 3 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoon granulated sugar
  • 1.5 cups plus 2 tablespoon Milk of choice *
  • 2 teaspoon vinegar
  • 6 tablespoon melted butter/ oil
  • ¼ teaspoon salt

For chocolate sauce

  • ¼ cup vegan chocolate chips / baker’s chocolate
  • rd cup full fat coconut milk* see notes

For topping (Optional)

  • Whipped cream topping
  • Chopped fruits of choice

Instructions

  • In a microwave safe bowl melt the cream and chocolate together for 30- 40 seconds stopping and stirring every 10 seconds until the chocolate melts and turns into a smooth sauce. Set it aside.

  • Pre heat your waffle maker according to the manufacturers instructions.

  • Sift All-purpose flour, baking powder and salt in a bowl.

  • In another bowl whisk in sugar oil, milk , vinegar and vanilla extract until blended.

  • Make a well in the center of dry ingredients and slowly pour the liquid mixture in it.

  • Whip with a hand held or electric whisk until smooth and lump free.

  • The batter will be pouring consistency thinner than a cake batter.

  • Once the waffle iron is hot . Pour the batter and spread it evenly to fill the cavities.

  • Cooking time as per the manufacturer’s instructions.

  • Serve warm with toppings of your choice.

  • You may freeze it for later use.

If you are using cow milk and regular butter than skip Vinegar as milk and butter are acidic enough.

Feel free to substitute full fat coconut milk with heavy cream and use chocolate chips or baking chocolate of your choice.

If vegan Use soy based whipped cream for topping.

Instructions for making waffles in a Cuisinart Griddler.

Batter quantity for 4 waffle cavities – 1 cup and 2 tablespoons.

Switch griddler ON- Selector - Griddle side and set temperature to 400 deg F. Once the light turns green pour and spread the batter . Close the griddle and set the timer for 4 minutes. Open and remove the waffles . If you like extra toasty then go for 5 minutes.

Dont have a waffle maker ? Turn these waffles into pancake -

Reduce butter (Fat) by 3 tablespoon

Reduce water by 1 tablespoon

Reduce baking powder by 1 teaspoon

Proceed with the recipe to make pancakes on the skillet.
